Being a Linux consultant, I have used linux as a desktop operating system for years. The last years prior to my switch to MacOSX I used ubuntu. Why ? Simply because ubuntu was and is the best out there. Based on debian (famous for stability, less famous for flexibility and easyness to install) with added flexibility and modern software, ubuntu is a killer linux version. I loved it, although I prefer Mac over Linux. I will talk about that some other day. The important thing is that the announcement of an embedded ubuntu version could be groundbreaking, if it is ever released. As we see more and more adaption and acceptance of ubuntu as opposed to other linux distributions. As it is both stable and flexible, it stands a chance. They've got my vote !
